Ingredients:

  • 1-2 tablespoons olive oil, or preferred oil

  • 1 pound ground beef

  • 1 large onion, diced

  • 4 cloves garlic, minced

  • 1 (15-ounce) can diced tomatoes, with juice

  • 1 (15-ounce) can tomato sauce, or tomato puree

  • 3 ounces tomato paste (1/4 cup)

  • 4 cups chicken broth

  • 1-2 cups water, or more as needed to adjust consistency

  • 1 tablespoon Italian seasoning

  • 1 teaspoon sea salt, or more as needed to adjust flavor

  • Black pepper, to taste

  • 8 ounces uncooked bowtie pasta (or substitute with your favorite pasta)

Suggested Toppings:

  • 1/2 cup ricotta cheese

  • 2 ounces mozzarella cheese, shredded

  • 1/4 cup Parmesan cheese, grated or shaved

  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Heat Oil: Heat a 4.5-quart soup pot over medium-high heat. Add olive oil and heat until shimmering.

  2. Cook Meat & Vegetables: Add ground beef, onions, and garlic to the pot. Sauté until the beef is cooked through, stirring as needed. Drain excess fat if necessary.

  3. Add Tomatoes & Broth: Stir in the diced tomatoes (with juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, pepper, and pasta noodles.

  4. Bring to Boil: Increase heat to high and bring the soup to a boil.

  5. Simmer: Reduce heat to a medium simmer and cook for 10-15 minutes until the pasta is cooked to your liking, stirring frequently to prevent the pasta from sticking together.

    • Tip: If needed, add more water or broth in small amounts to adjust the soup consistency.

  6. Serve: You can either mix in the ricotta, mozzarella, and Parmesan cheeses for a fully creamy soup, or add these cheeses to individual bowls as toppings. Garnish with fresh parsley.

Storing Tips

  • To store, let the soup cool completely and refrigerate in an airtight container for up to 5 days, or freeze for up to 90 days. If reheating, add extra water or broth as needed, as the pasta may absorb the broth during storage.

This Lasagna Soup is a cozy, flavorful twist on classic lasagna that’s ready in a fraction of the time. Perfectly seasoned with Italian spices and packed with tender pasta, hearty meat, and rich tomato flavors, it’s a true comfort dish for any day of the week. Whether you’re meal prepping for the week or need a quick dinner option, this lasagna soup is sure to become a go-to recipe.
