Homemade Chicken Alfredo Lasagna Recipe: A Creamy, Comforting Classic

Ingredients

For the Alfredo Sauce:

  • 2 tablespoons unsalted butter

  • 2 garlic cloves, minced

  • 1 cup onion, chopped

  • 10 ounces fresh baby spinach

  • 4 cups heavy cream

  • 1 1/2 cups grated Parmesan

  • 15 ounces ricotta cheese

  • 1/4 teaspoon black pepper

  • 1 1/2 teaspoons salt

For the Chicken and Cheese Filling:

  • 3 cups shredded rotisserie chicken

  • 15 cooked lasagna noodles (see my homemade lasagna noodle recipe)

  • 3 cups shredded mozzarella cheese



Instructions

Step 1: Sauté Vegetables

To start, heat a large skillet over medium-high heat. Add 2 tablespoons of butter along with 2 minced garlic cloves and 1 cup of chopped onion. Cook the onions until they become soft and translucent, stirring occasionally. This should take about 5 minutes.

Once the onions are translucent, add 10 ounces of fresh spinach. Stir it into the onions and garlic until the spinach wilts and reduces in volume. This will give the Alfredo sauce a nice burst of color and a bit of earthy flavor.

Step 2: Make the Alfredo Sauce

Next, it’s time to make the Alfredo sauce. Into the same skillet, add 4 cups of heavy cream, 1 1/2 cups of grated Parmesan, and 15 ounces of ricotta cheese. Stir well to combine. Add 1/4 teaspoon of black pepper and 1 1/2 teaspoons of salt for seasoning. Once the mixture is smooth, let it come to a slight simmer, stirring occasionally.

As the sauce heats up, the cheese will melt into the cream, creating a luscious, creamy texture. After a few minutes, add 3 cups of shredded rotisserie chicken to the sauce and mix it in thoroughly. Let everything simmer for another 5 minutes, then remove it from the heat.

Step 3: Layer the Lasagna

Now that your Alfredo sauce is ready, it’s time to assemble the lasagna! Preheat your oven to 350°F. In a 9x13-inch deep baking dish, add a large spoonful of the chicken Alfredo mixture to coat the bottom of the pan. This will help prevent the noodles from sticking to the bottom.

Begin adding in your cooked lasagna noodles (refer to my homemade lasagna noodle recipe). I was able to fit about 5 noodles in each layer, but this will vary depending on the size of your dish. Once the noodles are in place, add a generous amount of the chicken Alfredo mixture on top, making sure the noodles are fully covered.

Sprinkle on about one-third of the shredded mozzarella cheese. Repeat layering: add another layer of noodles, followed by the chicken Alfredo mixture and mozzarella. Continue until all 15 lasagna noodles are used up. Be sure to finish with a final layer of the chicken Alfredo mixture and the remaining mozzarella.

Step 4: Bake the Lasagna

Once your lasagna is assembled, cover the baking dish with foil and place it in the oven. Bake for 25 minutes at 350°F. After 25 minutes, remove the foil and bake for another 10 minutes, or until the top is golden and bubbly.

Step 5: Serve and Enjoy!

Let the lasagna cool for about 10 minutes before slicing. This will allow the layers to set and make it easier to serve. Cut into squares and serve with a side of garlic bread and a fresh salad for the ultimate meal.
