The Perfect Fall Dessert

There’s nothing quite like a classic apple pie, especially when it’s filled with juicy apples, aromatic spices, and topped with a delightful crumble. Whether it’s for a holiday dinner or a cozy weekend treat, this homemade apple pie is a crowd-pleaser that showcases the best of what fall has to offer.

Ingredients You'll Need

Apple Filling:

  • 1/2 cup packed brown sugar

  • 3 tablespoons all-purpose flour

  • 1 teaspoon cinnamon

  • 1/8 teaspoon ground ginger

  • 1/8 teaspoon ground nutmeg

  • 6-7 cups apples, peeled and sliced

  • 1 tablespoon lemon juice

  • 1 9-inch pie crust for a double crust

  • 1 tablespoon butter

  • 1 large egg white

Crumble Topping:

  • 1 cup light brown sugar

  • 1 ½ cups all-purpose flour

  • ½ teaspoon cinnamon

  • ¼ teaspoon freshly grated nutmeg

  • Pinch of kosher salt

  • 1 stick unsalted butter, cold and diced

  • Optional: Chopped, toasted pecans or walnuts (decrease flour by 1/2 cup and use 1 cup of chopped nuts)

Pie Crust Recipe (makes 2 pie crusts):

  • 1 cup (2 sticks) unsalted butter, cut into ¼-inch cubes and chilled

  • 2 ¼ cups all-purpose flour

  • 1 teaspoon salt

  • 8 to 10 tablespoons ice water

Step-by-Step Instructions

  1. Prepare the Apple Filling: In a small bowl, combine brown sugar, flour, and spices; set aside. In a large bowl, toss the sliced apples with lemon juice. Add the sugar mixture and toss to coat.

  2. Assemble the Pie: Line a 9-inch pie dish with the bottom crust and trim the edges. Fill with the apple mixture and dot with butter. Roll out the remaining crust for the top, place it over the filling, trim, seal, and flute the edges. Cut slits in the crust for ventilation.

  3. Finish the Pie: Beat the egg white until foamy and brush it over the crust. Sprinkle with sugar. Cover the edges loosely with foil.

  4. Bake: Bake at 375°F for 25 minutes. Remove the foil and continue baking until the crust is golden brown and the filling is bubbly, about 20-25 minutes longer. Cool on a wire rack.

Making the Crumble Topping

  1. Prepare the Crumble: In a bowl, mix together flour, brown sugar, cinnamon, nutmeg, and salt. Add the cold, diced butter and mix until the mixture resembles coarse crumbs.

  2. Assemble: Sprinkle a third of the crumble topping over the apple mixture in the pie, mixing it in slightly, then sprinkle the remaining topping evenly over the apples.

Pie Crust Instructions

  1. Make the Crust: In a food processor, pulse chilled butter, flour, and salt until the mixture resembles coarse sand. Gradually add ice water until the dough forms large clumps. Divide into two balls, flatten into disks, and refrigerate for at least an hour.

  2. Roll Out: When ready, roll out the dough on a floured surface to fit your pie pan. Transfer to the pan, flute the edges, and proceed with the pie filling.
